About the Journal
Focus and Scope
The Food Science and Food Magazine (RAYCA) (ISSN 3061-7499) is a semi-annual technical-scientific publication, aimed at professionals, academics, and students in the Food Science area from anywhere in the world. Topics covered include, but are not limited to Administration and Marketing, Quality and Safety Management, Technological Processes, Gastronomy, Nutrition, Food Anthropology, and New Product Development. Contributions are accepted in two sections: review articles and technical-scientific studies, information disseminated in both English and Spanish. All documents submitted for possible publication must certify a peer review process, which operates under the "double-blind" modality.
RAYCA is sponsored by the University Center for Biological and Agricultural Sciences of the University of Guadalajara, Mexico; is an open-access publication. All texts will be reviewed by two or more referees before being accepted. All his contributions are distributed under a CC-BY 4.0 International license; authors are not charged for submitting and processing articles for publication. RAYCA adheres to the general ethical guidelines for scientific publication, established by the Publications Ethics Committee (COPE) (https://publicationethics.org/).
Mission
Promote the culture of publishing the results of original research and reviews in the areas of food and food science and water for human consumption.
Vision
To be in the medium term a magazine with national scope and present in databases. To be a long-term journal with international reach, present in databases and indexed.
General Policies
Open access policy
By the information dissemination policies of the University of Guadalajara, and intending to contribute to the global exchange of knowledge, this journal provides immediate open access to its content, at no cost to subscribers and authors.
Policy for receiving and publishing articles
RAYCA only considers research and literature review articles. It does not accept hypothesis papers, comments, opinion pieces, chaos studies, chaos reports, etc.
Notice of Privacy
Food and Food Science maintains the confidentiality of all details about submitted documents, does not comment publicly on submitted or rejected manuscripts, and maintains the confidentiality of the reviewer. Authors, reviewers, and editors should also treat correspondence as confidential unless explicitly stated otherwise.
The names and email addresses entered in this magazine will be used exclusively for the purposes stated therein and no other third parties will be provided or for use with fines.
