Editorial Team
The Revista Alimentación y Ciencia de los Alimentos (RAYCA) has an Editorial Team responsible for the academic, ethical, technical, and administrative management of the publication process. Its composition is based on criteria of disciplinary relevance, academic trajectory, institutional plurality, transparency, impartiality, and commitment to good editorial practices.
The Editorial Team participates in defining the journal’s editorial policy, conducting the preliminary evaluation of manuscripts, selecting peer reviewers, monitoring the peer-review process, making editorial decisions, managing communication with authors and reviewers, updating editorial guidelines, and safeguarding the academic integrity of the publication.
The journal shall keep published and updated information on each member of the Editorial Team, including full name, editorial role, complete institutional affiliation, and country.

Editorial Responsibilities
Editor-in-Chief
The Editor-in-Chief coordinates the academic and editorial operation of the journal; supervises compliance with editorial policies; verifies the relevance and suitability of submitted manuscripts; assigns manuscripts to editors or reviewers; communicates editorial decisions; ensures the confidentiality of the peer-review process; addresses matters related to editorial ethics, conflicts of interest, corrections, retractions, complaints, and appeals; and represents the journal before the publishing institution, scientific information systems, indexes, databases, and editorial evaluation bodies. The Editor-in-Chief also carries out the legal procedures related to the operation of the journal.
Editorial Committee
The Editorial Committee advises the Editor-in-Chief on the academic orientation of the journal, the updating of editorial policies, the definition of thematic lines, the preliminary evaluation of manuscripts, the identification of peer reviewers, the review of good editorial practices, and the strengthening of the scientific quality of the publication.
Its members should act with impartiality, confidentiality, academic responsibility, and adherence to the principles of scientific integrity. When a conflict of interest exists in relation to a manuscript, they must declare it and refrain from participating in its evaluation or editorial decision.
Peer Reviewers
Peer reviewers collaborate with the journal by providing specialized, confidential, objective, respectful, and well-founded academic evaluations. Their role is to assess the originality, relevance, methodological rigor, clarity of exposition, bibliographic quality, scientific contribution, and ethical compliance of manuscripts submitted for review.
Text Revision and Editorial Assistance
Text revision and editorial assistance contribute to the formal, linguistic, technical, and documentary quality of accepted manuscripts. These functions support editorial standardization, style editing, file preparation, metadata updating, and the operational follow-up of the editorial process.
Criteria for Composition and Updating
The journal is currently in the process of restructuring its editorial bodies in order to strengthen their composition through the incorporation of scholars from other institutions. This action seeks to move toward a more plural, interdisciplinary editorial structure with greater external representation in relation to the publishing entity, in accordance with national editorial evaluation criteria that recommend that at least two-thirds of the members of editorial bodies have an affiliation external to the publishing entity.
The composition of the Editorial Team shall be reviewed and updated periodically. Any changes in its members, roles, affiliations, or academic identification data shall be incorporated in a timely manner on the journal’s official website.
Conflicts of Interest of the Editorial Team
Manuscripts submitted by members of the Editorial Team, by individuals affiliated with the publishing entity, or by authors with a direct academic relationship with members of the journal shall be managed under reinforced measures of impartiality. In such cases, the manuscript shall be assigned to an editor with no conflict of interest, and all contributions shall be submitted to reviewers external to the publishing entity.
No member of the Editorial Team shall participate in the evaluation, review, or editorial decision of manuscripts in which there is an academic, institutional, personal, financial, or professional conflict of interest.
