Reflections on artificial intelligence in the food industry

Artificial Intelligence (AI) is applied in various situations of daily life. The objective of this review is to show the broad current panorama regarding the implications of the use of AI with respect to the food industry. For which a regulatory framework is necessary that generally already exists in International Organizations and in countries such as Mexico, Chile, the United States, China and the European Union. It must be taken into account that the use of this technology has a direct and indirect impact on the environment through the food industry, in which its uses include, but are not limited to: safety/health, supply chain optimization, manufacturing/quality control, public administration and services, sustainable produc-tion and personalization of the consumer experience/development of new products. Artificial intelligence is revolutionizing the food industry, helping to improve the efficiency, quality and safety of food products worldwide. Specific legislation is required for the use of this technology in the food industry.
